| Physical and Chemical Properties | Transparent colorless prismatic crystal or white crystalline powder. Odorless. Salty taste. Slightly hygroscopic in the air. Soluble in water (1g/3 m1), the aqueous solution is left-handed, neutral, 5% aqueous solution of pH 7~9. Insoluble in ethanol, ether. Loss of crystal water at 120 deg C, and then heated to decompose. When burning, the smell of sugar burning is emitted, and the residue (Ash) is strongly alkaline, and the foam is generated when acid is encountered. |

White transparent crystal or crystalline powder. Soluble in about 3 parts of cold water, 1.5 parts of boiling water, the aqueous solution is alkaline. pH 7 ~ g. Insoluble in ethanol. Heat dissolved in the crystallization of their own water. The water was dehydrated at 150 °c to become anhydrous. Heat gives off spicy and irritating smoke.

tartaric acid was dissolved in water, heated, added to sodium carbonate decahydrate and filtered. The filtrate was concentrated and cooled with stirring. The crystals were filtered with suction, washed with water and dried at room temperature to obtain pure sodium tartrate.
